For the Beef Filling

8 corn tortillas

3 cups shredded Mexican cheese blend (divided)

Instructions
- Brown the Beef: In a skillet over medium-high heat, cook ground beef until browned. Remove from the skillet and drain fat.
- Sauté Aromatics: In the same skillet, sauté diced onions until soft (about 4 minutes). Add garlic and cook for 30 seconds until fragrant.
- Build the Filling: Return beef to the pan. Add taco seasoning, tomato paste, green chiles, and water (as instructed on the seasoning packet). Simmer until thickened and most of the liquid is absorbed.
- Prepare the Dish: Spread ½ cup enchilada sauce across the bottom of a 9×13-inch baking dish.
- Assemble Enchiladas: Warm tortillas until pliable. Fill each with ⅓ cup beef mixture and ¼ cup cheese. Roll and place seam-side down in the baking dish.
- Add Sauce & Cheese: Pour remaining enchilada sauce over the top. Sprinkle with remaining cheese.
- Bake: Bake uncovered at 350°F (175°C) for 20 minutes until cheese is melted and bubbly.
- Serve: Let rest for a few minutes. Serve hot with desired toppings.
Notes
- Warm tortillas in a dry pan or microwave under a damp paper towel to prevent tearing.
- Add black beans, rice, or even cooked chorizo to the beef filling for variety.
- Use green enchilada sauce for a flavor twist.
- Freshly shredded cheese melts better than pre-shredded.
