Description

Savory ground beef enchiladas wrapped in warm corn tortillas, smothered with red enchilada sauce, topped with melted Mexican cheese, and baked to bubbly perfection. A hearty, crowd-pleasing meal for any night of the week.

For the Beef Filling

  • 1 lb ground beef

  • ½ medium yellow onion, diced

  • 2 cloves garlic, minced

  • 1 (1 oz) packet taco seasoning

  • 1 tbsp tomato paste

  • 1 (4 oz) can diced green chiles

For the Enchiladas

  • 1 (15 oz) can red enchilada sauce

  • 8 corn tortillas

  • 3 cups shredded Mexican cheese blend (divided)

  • Sour cream

  • Fresh cilantro

  • Pico de gallo

  • Diced avocado

  • Shredded lettuce

  • Green onions

  • Cotija cheese

  • Hot sauce


Instructions

  1. Brown the Beef: In a skillet over medium-high heat, cook ground beef until browned. Remove from the skillet and drain fat.
  2. Sauté Aromatics: In the same skillet, sauté diced onions until soft (about 4 minutes). Add garlic and cook for 30 seconds until fragrant.
  3. Build the Filling: Return beef to the pan. Add taco seasoning, tomato paste, green chiles, and water (as instructed on the seasoning packet). Simmer until thickened and most of the liquid is absorbed.
  4. Prepare the Dish: Spread ½ cup enchilada sauce across the bottom of a 9×13-inch baking dish.
  5. Assemble Enchiladas: Warm tortillas until pliable. Fill each with ⅓ cup beef mixture and ¼ cup cheese. Roll and place seam-side down in the baking dish.
  6. Add Sauce & Cheese: Pour remaining enchilada sauce over the top. Sprinkle with remaining cheese.
  7. Bake: Bake uncovered at 350°F (175°C) for 20 minutes until cheese is melted and bubbly.
  8. Serve: Let rest for a few minutes. Serve hot with desired toppings.

Notes

  • Warm tortillas in a dry pan or microwave under a damp paper towel to prevent tearing.
  • Add black beans, rice, or even cooked chorizo to the beef filling for variety.
  • Use green enchilada sauce for a flavor twist.
  • Freshly shredded cheese melts better than pre-shredded.
